Hello! Today I feel nearly recovered from my cold. Our family was sick for a month and a half with tiny breaks in between where we were well. It was brutal. I had the flu, a cold, another cold and then the worst cold of all! I currently have a nose that could light the way for Santa’s sleigh, it is that red. My gut was always healthy as a kid. I could eat anything, and did. Since my bout with severe food poisoning a couple of years ago, I have suffered from destroyed villi and a severe gluten intolerance. I will never take my health for granted again. I used to eat whatever I wanted, at any time of day, without a second thought. The title is a message to myself. I have decided that half of my issues are over-thinking food. I have been trying something new. I am hopelessly addicted to coffee but I have been trying to cut down, as I have a very sensitive system. Thank goodness for green tea! I have cut down my caffeine consumption to two cups in the morning, and the occasional third cup in the afternoon before 2pm. I try anyway. This week was so hectic that when Friday night rolled around I felt I “deserved” my one drink of the week. But, instead of using sense, I found the biggest glass I could and poured the whole bottle in to it. What fun, right? I sat up with my husband and watched a movie. Yesterday was a big day for me. Josh left for work really early and came back just after lunch so that I could go to my physical and get my test results at the doctor. I anxiously waited in the waiting room, literally sweating: AND IT WAS GOOD NEWS. Two ultrasounds and a bunch of blood tests later and we have found….. I am not celiac! I am currently being forced to eat gluten so that my doctor can test me for Celiac disease. I eat it at breakfast and go for healthier, as-gluten-free-as-possible, delicious options through out the rest of the day. Today I wanted something that reminded me of a sandwich- but without the bread. I didn’t come up with a new idea really, but this is a really delicious bread-free lunch you may want to try.
