I have been eating gluten-free for a few years now. I am by no means an expert, but I do feel that I have some tricks and tips up my sleeve and love to share, so here we go! First, a little background. Why am I gluten-free? A few years ago, I suffered an extremely harsh bout of food poisoning, which ruined my gut villi and lining, making me extremely sensitive to gluten. My health has slowly been improving this year. I suddenly decided I didn’t want to sit on my hands and just accept that my health would never be great again. As you know from previous posts, I just coasted through life eating whatever I wanted and exercising sporadically until my late twenties. I have the driest skin on my lips of all time and my adult acne has returned thanks to the effects of cold pills and subsisting on comfort food (every night is GF pasta night!). I also…

I anxiously waited in the waiting room, literally sweating: AND IT WAS GOOD NEWS. Two ultrasounds and a bunch of blood tests later and we have found….. I am not celiac! I do not even have a non-celiac gluten intolerance! I am only gluten sensitive. So much relief. She said that if I was gluten-intolerant it would show up in my lab results. My inability…
